Are you swimming in summer squash? Maybe you have a garden with oodles of zucchini just waiting to be zoodled? Or maybe you have a generous gardener friend/neighbor who’s willing to share their fresh produce.

Elisa, Just Say Yes to Fruits and Vegetables Nutritionist, shares her four favorite ways to Just Say Yes to Zucchini.

#4 Zucchini Pizzas

Are you looking to mix up pizza night at your house? These zucchini pizzas are a great way to customize the flavor by adding toppings and are easy to make on those busy nights.

#3 Zucchini Boats
Trying to get your kids to eat zucchini? Making food fun is the first step! This recipe uses the whole zucchini, so there’s no waste, and you can flavor the filling however you want. In the mood for tacos? Flavor the meat with cumin and chili powder. Want Italian? Go for oregano, basil and tomato sauce.

#2 Summer Squash Salad
This recipe is a favorite because it is delicious, fresh and it requires no cooking. Which means you don’t have to heat up the house with your oven or stand next to a hot stove? Did you know you can eat summer squash and zucchini raw? Yep, it’s true! And it is totally delicious! Elisa recommends choosing small summer squash for this salad and dicing them into small bite-size pieces.

#1 Zucchini Fritters
My top pick! If you haven’t made these, you must. They are super easy, fry up in minutes and you can top them with whatever you like. My favorite toppings are feta and dill, cucumber yogurt sauce or low-fat sour cream. 

Honorable Mentions 

  • Zucchini Parmesan – This recipe does require you to turn your oven on but it is well worth it! The kids can totally help out with this, dipping the zucchini into the egg and breadcrumbs.
  • Zucchini Lasagna Roll-ups – If you don’t feel like doing the whole “flour, egg, breadcrumb” thing, this recipe is for you. Totally delicious, super easy and it looks so fancy you’ll wow your family.
