Sam's Crispy Beetroots

Our JSY nutrition educator Sam loves beets! Beets are packed with antioxidants, which are compounds that help protect your cells from damage caused by free radicals. These harmful molecules can contribute to the development of chronic diseases like cancer, heart disease, and Alzheimer’s. Try out her crispy beetroot recipe. 


  • 6 beets  
  • 1 tbs of olive oil 
  • 1 tbs balsamic glaze 
  • ½ tsp garlic powder 
  • ¼ tsp dried thyme 
  • Salt and pepper to taste  


  1. Rinse beets, remove beet leaves, and dice beets into 1-inch cubes. 
  2. Toss the beets in a mixing bowl with oil, balsamic, and seasonings.  
  3. Place in the air fryer or oven at 390 degrees until the beets become crispy (about 15 minutes)
